The following are my recommendations for instructional materials.
Condor
At the top of my list is Condor the Competition Soaring Simulator. In addition to the software, you will need a joystick and a set of rudder pedals. Cumulus Soaring, Inc.. offers all three items . Connect to the Condor page. About 2/3 of the way down you will find the product offerings. Select the Condor Standard Package.

Russ Holtz has produced a number of excellent, glider-specific training resources including:

Sporty’s Pilot Shop
Sporty’s Pilot Shop offers an excellent video production entitled “So You Want to Fly Gliders“. Available formats include electronic download, DVD, and iPhone/iPad app. Connect to Sporty’s website, enter “glider” in the search window, and click the Search button. All three media options are displayed as well as a number other glider-related publications.
